2/3 cup Alpen Original All Natural Muesli
1/2 cup 1% low-fat milk
1/2 cup part-skim ricotta
1 1/2 teaspoons honey
1/2 teaspoon grated lemon rind
How to Make It
Combine muesli with milk; microwave at HIGH 1 minute. Combine ricotta, honey, and lemon rind. Dollop 2 tablespoons over each serving of warm muesli, and top with fresh mint. Save remaining ricotta mixture for the rest of the week's breakfast grains.

Loved this! Again, as is my style I make the recipe exactly as it is written the first time, then make adjustments if we like the recipe but feel it needs a tweak. This one needs no tweak. I keep the ricotta mix in the fridge, and the cereal is easy to make in a hurried morning then. Very filling and flavorful.
