Ingredients

  • 1/2 cup "measures-like-sugar" calorie-free sweetener
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 large egg white
  • 4 1/2 teaspoons water
  • 2 1/2 cups pecan halves
  • Cooking spray

Preparation

  1. 1. Preheat oven to 300°.
  2. 2. Combine first 4 ingredients in a medium bowl, stirring well.
  3. 3. Beat egg white and water with a mixer at medium speed until foamy. Gradually add sweetener mixture, 1 tablespoon at a time, beating until stiff peaks form; fold in pecan halves.
  4. 4. Pour pecan mixture onto a jelly roll pan coated with cooking spray. Bake at 300° for 25 minutes, stirring every 10 minutes.
  5. 5. Cool completely in pan. Store in an airtight container.
