Combine fruit, apple juice, 1 cup water, brown sugar and cinnamon in medium saucepan and place over high heat. Bring just to a boil, stirring to dissolve sugar. Reduce heat to low and simmer, stirring occasionally, until juices have reduced to syrup consistency and fruit is soft but not falling apart, 10 to 15 minutes. Stir in ginger before final 2 minutes of cooking. Serve warm; or let cool, remove cinnamon stick, cover and chill.
