Ingredients

  • 1 pound(s) roughy or haddock fillets
  • 1/4 cup(s) Italian bread crumbs mixed with Waitrose parsley & thyme rub
  • 1 parsley finely chopped
  • 1/8 teaspoon(s) pepper
  • 1/8 dried thyme

Preparation

marinate fillets in lemon juice and olive oil

1. oven to 450 F

2. place fillets in baking pan, brush with olive oil

3. combine dry ingredients in a bowl, shake over fillets

4. bake for 10 minutes or until flakey
