This was HORRIBLE! Too much sugar and way too much sparkling wine. You couldn't even taste the apricot flavor.

I totally disagree with the reviewer who didn't like this. I thought it was just great. The sparkling wine gave it an interesting flavor. Could very much taste the apricot in the sorbet. A very refreshing summer dessert.

I thought this was a great recipe. The alcohol boils away from the sparkling wine. My first try the apricot was understated, but mostly because the fruit was not the most flavorful. I tried again with ripe peaches and it was fantastic. Mostly, something in the sparkling wine keeps a wonderful consistency to the sorbet. I've always had trouble keeping sorbets from getting "icy". This did not and it was a big hit. I will try it with more fresh fruits this summer.

I actually added more wine than I was supposed to (didn't want to waste any and I am not a big drinker) and yes, you can taste the wine but you can also taste the apricots. I found this beautifully refreshing a dessert, very classy but expensive to make thanks to the wine and apricots aren't cheap. I really enjoyed this dessert and will probably make it again. I thought it was quite lovely. BTW, I froze the extra sparkling wine in an ice cube tray and will be using it to make a white sangria.

This is a WOW! It is by far the best frozen dessert recipe yet! Wonderful apricot flavor, the champagne is there, but not overwhelming. Second time I didn't peel the apricots. The stick blender took care of them. Sorbet was as smooth as silk. I'll keep making it and passing out the recipe.
