1/2 slice thin-sliced bread
1 small clove garlic
1 tomato, seeds and pulp only
1 teaspoon extra virgin olive oil
1/2 cup cucumber, cut into half-moons
1/2 teaspoon sherry vinegar
How to Make It
Toast the slice of bread. Rub all over with the garlic clove, then top with the tomato seeds and pulp. If the tomato has been refridgerated, it's best to warm it up slightly so it's at room temperature. Drizzle with the olive oil, and sprinkle with salt. Serve the cucumber on the side, lightly tossed in a little salt and the sherry vinegar.
