Spanish-Style Rice

Yield 4 servings

Ingredients

  • 2 1/2 cups water
  • 1 (4.5-ounce) can chopped green chiles, undrained
  • 3/4 cup chunky salsa
  • 1 (8-ounce) package black beans and rice mix (such as Vigo)
  • 1/4 cup minced fresh cilantro

How to Make It

  1. Combine first 3 ingredients in a medium saucepan; bring to a boil. Add black beans and rice mix, stir well. Cover and simmer 20 to 25 minutes or until liquid is almost absorbed. Stir in cilantro.
