Spanish Garlic Soup
This simple soup uses ingredients most Spanish cooks have on hand--garlic, eggs, broth, smoked paprika, and olive oil.

Ingredients
- 1 teaspoon olive oil
- 1/2 cup chopped garlic
- 4 cups water
- 3 cups fat-free, less-sodium chicken broth
- 2 cups (1-inch) pieces stale peasant bread
- 1/2 teaspoon Spanish smoked paprika
- 1/8 teaspoon salt
- 2 large eggs, beaten
Preparation
- Heat oil in a large saucepan over medium heat. Add garlic; sauté 4 minutes or until lightly browned. Add water and broth; bring to a boil. Reduce heat, and simmer 25 minutes or until garlic is tender. Add bread, paprika, and salt, stirring to break up bread pieces. Gradually add eggs, stirring constantly to form long threads.
