Southwestern Spinach Dip

2/3 cup mayonnaise
1/2 (8-oz.) package cream cheese, softened
1/2 cup fresh cilantro leaves
2 tablespoons sliced green onions
1 teaspoon grated lime rind
2 tablespoons fresh lime juice
1/2 teaspoon ground cumin
1/2 teaspoon salt
1 jalapeño pepper, seeded and chopped
1 (10-oz.) package frozen chopped spinach, thawed and squeezed dry


Combine first 9 ingredients in a food processor; process until smooth. Add spinach, and pulse 3 times or until blended. Transfer dip to a bowl; cover and refrigerate up to 1 day. Serve with fresh cut vegetables, multigrain tortilla chips, or crackers.
