This was quick, easy and delicious. I served the salsa on the side vs. inside the omlete. Next time I will heat the beans in the microwave before mixing with the onions and cheese as they were still a bit cold after the omlete was done.

Excellent! Easy to prepare, very filling. Curious to know what others do with 4 extra egg yolks, or is better to use egg white substitute and one real egg? Whatever egg combo you use, it's the filling that really makes this so good. Definitely a keeper.

I was having a hankerin' for "Mexican Breakfast" but was unfortunately lacking some ingredients. I didn't have salsa, cilantro, or green onions on hand. Made it with canned fire roasted tomatoes with chiles and it was amazing. Will try it again with the full list next time!

I'm not a big fan of omelets, but this was sooo good. Instead of adding the salsa with the cheese and bean mixture, I prefer it on the side, it seemed to make it not as "slimey."

I was hesitant about the beans but this turned out to be an excellent breakfast. I mixed the beans, cheese, salsa and green onions in a bowl before adding them to the omelet and I put a glass lid over the skillet after adding the mixture...it warmed it up nicely. I did not use the cilantro, I don't like it, but it was delicious.

Very good! I used 3 whole eggs and seasoned with salt, pepper, and Cayenne. I topped the omelet with salsa instead of adding into the eggs.

Being on Weight Watchers this was only a 4 point breakfast and was satisfying and filling.....Loved It. Very tasty, good flavor, Cilantro made it.

Tasted good, but you really should emphasize better that this recipe is TWO servings. Not "Slide omelet onto a plate; cut in half." That makes it sound like one serving (one plate????)

I have been making something similar to this for years. I used Paul Newmans Black Bean and Corn salsa, and then add extra black beans to that and some hot cause. The Newmans salsa is so good! Mix it in with some egg whites and lite cheese of your choice and you have a delicious, healthy breakfast. I even make an egg white quiche with these ingredients so its ready for rushed mornings!

Loved the black beans, cheddar, and salsa filling - so savory - but wasn't a fan of the green onion since it only cooks but a minute. Great idea to stir the chopped cilantro directly into the egg mixture. Served with cheddar quesadillas for dinner.

This is an easy quick omelet to make. I wouldn't hesitate to serve it to my guests. I used egg substitute or the egg whites. I warmed up the black beans before putting them into the omlet. I also used Harry & Davids black bean and corn salsa. yummy!!
