    This soup is fab. I added rotel and kept the tomatoes. I also used pinto beans instead of the white beans. And I didn't have limes, so I used lemon juice and it turned out just as good as usual.

    This is the perfect go-to recipe for a busy weeknight. I didn't have the pre-roasted chicken, so I used ground turkey instead and the results were just fine. To spice it up a bit, I topped the finished soup with a dollop of salsa. I will definitely keep this tasty recipe on hand.

    This soup was GREAT! I am not a huge fan of cilantro, so I just added a little. As some other reviewers have stated. The lime really makes it. I added some fresh tomatoes and some Rotel tomatoes with chilis. My brother-in-law couldn't get enough of it after a late Cubs game.

    This soup always gets rave reviews with my group. It's great for a crowd or just the two of us and gets better with each day it's kept in the fridge. I use canned tomatoes, with or without peppers, serve with whole grain bread. I make it time and time again. A deffinate keeper in my recipe book.

    After seeing this in my best of cooking light cookbook and reading the reviews, I decided to try it and modify it as the others had. I added 1/3 cup brown rice and rotel. It was great! I would make this again as it is easy and very tasty.

    I have made this a couple times with chicken but since I had an abundance of turkey (go figure) I made this yesterday with turkey breast and turkey broth from the carcass. Like another reader I used brown rice and frozen garden tomatoes since I didn't have fresh. I had corn tortillas on hand so made some baked chips to crush in the soup with the avocado. My husband would not stop raving about it which, of course, is the goal is it not? A low-fat, low-calorie meal that he loves!

    Great, tasty, easy, fast! Will make it again. I think this is an everyday meal or a starter for a Southwestern Tex-mex dinner. I didn't serve anything with the dish, but tortillas or chips would have been great. Also cornbread muffins would be good. You can use cooked rice left over and just add it at the end when adding the avacados. You can also broil your own chicken breasts in 20 minutes if you can't get to the store.

    Great recipe - very tasty. I added extra cilantro, chili powder for an extra kick, but other than that followed the recipe exactly. after tasting the soup, my boyfriend just said, 'wow.' I think next time i may add some corn and jalepeno. delish, will make again!

    Hearty soup taste good, but it seems to be lacking something in the flavor. I doubled the beans and added a little more chicken and used drained chopped can tomatoes. Another reviewer added crumbled corn tortillas & cheese b4 serving; next time I'll try that.

    Fantastic soup and excellent use of leftover roasted chicken. Did add one small can of diced green chilies when cooking onion and garlic. Also, used one can of fire roasted diced tomatoes in lieu of the fresh tomatoes....added these when I added the beans and stock (just used one full 32oz box). Did not add the avocado to the pot of soup, but garnished individual bowls with it when serving (did not want avocado in leftovers to turn to mush). The entire family loved this recipe, including three and five year old daughters. Served with cheese quesadillas. Will definitely be making this again soon.

    This is soooo good. But instead of the rotisserie chicken i put it all in a crock pot w chicken breast..(it was soo easy)

    This is an awesome soup, and very easy to make. Added can of rotel and can of green chilies.. Added some zip to it! Will definitely make it again!

    This soup was excellent and super duper healthy. I did not add rice or avacado to mine and still thought it was amazing and very lo-cal! This one is my new "go to" soup to have on hand a lot!

    I added a can of rotel during the cooking process. I also added the juice of two whole limes, which really made it good. I do believe it needed more cumin, which I also added. I added frozen corn and other roasted vegetables. Very good.

    I thought this was a great soup. My husband loved the flavor. It was quick and easy. I threw in some leftover frozen mixed vegetables that were in the freezer. Can't ever have too may veggies.

    Really enjoyed this soup and left overs the next day were even better. Slightly altered the recipes. Used left over thanksgiving turkey in place of chicken. Replaced fresh tomatoes with 14 oz can tomatoes, used pastina instead of rice and added pinch of chili powder. Will definitely make again.

    This dish was fabulous! Very flavorful with all the ingredients working well together. I made a few changes to the recipe though. I added chopped carrots when I added the onion and garlic. I also put the tomatoes in when I added the cilantro, only cooked it for a minute or two. I used black beans instead of great northern beans. Next time I will add an extra cup or two of broth to the mixture, it could use more liquid. I added the avocado after I spooned up the soup into individual bowls, don't like the taste of heated avocado. This will definitely be something I make on a regular basis!

    We love this soup. It comes together easily. I usually use 1 can of diced tomatoes with green chills instead of the fresh tomato & also add more cumin & Mexican oregano. I always toss in 2 cups of frozen corn. It also does well in the crockpot, which is a bonus this time of year. Just leave the cilantro & juice until right before serving to keep the bright flavors.
