Southwest Sausage and Rice

    Worthy of a Special Occasion

    This came together in just over 20 minutes. Used chicken broth to cook the package rice. Cooked 1/2c chopped onion and 1/2c chopped red bell pepper with Trader Joe chipotle chicken sausage. Used low-fat shredded Mexican blend cheese instead of parmesan. Served with a CL black bean salad. Very easy to tweak to taste.

    I liked this recipe, though my husband and kids didn't. It was too spicey for my 2 and 5 year old.

    A definite fave. Delicious, and really quick and easy to put together. I usually serve it with stewed tomatoes and okra and a black bean salad. I make this a lot!

    This was good. The flavors were very tasty but aesthetically, it needed something red. Next time I will chop up a tomato or red pepper. I did have seconds, though. ;)

    This has the most wonderful flavor! I took some reviewer suggestions and added red pepper and onion when cooking the sausage. I would like to add even more ingredients (maybe black olives) so I'll be experimenting with this recipe again and again.

    Tasty, very easy, little clean-up. I used 12 oz. hot turkey sausage.

    Delicious the next day, too. Made a few small changes-- used 5.3oz saffron risotto mix, pork Italian sausage, fresh corn (2 stalks), and added a little onion, orange bell pepper, and mild jalapeno to the saute. Would definitely make this again and might experiment with other alterations.
