In a greased 3-quart casserole dish, layer sausage, onions, peppers, tomatoes and cheese. In a large bowl, whisk together remaining ingredients; pour over cheese. Bake, uncovered, at 350 degrees for 55 to 60 minutes, until set and top is golden. Let stand for 10 minutes before serving.
I liked it; and so did the work group with whom I shared it this morning. It tasted good and was easy. I made minor changes per what I had on hand- Italian sausage, a small Walla Walla sweet onion (in lieu of green onions) and pancake mix, rather than strictly biscuit mix. A more shallow casserole dish will be the one change I will make, even if I follow the rest of the recipe more carefully next time.
