Southern "Ice Cream" Grits

Ingredients

  • 3 cups milk
  • 3 cups water
  • 1 teaspoon salt
  • 2 cups uncooked regular grits
  • 1/2 cup butter or margarine
  • 3 cups (12 ounces) shredded sharp Cheddar cheese
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon paprika

Preparation

  1. Combine milk, water, and salt in a medium saucepan; bring to a boil over medium heat. Add grits, stirring well. Reduce heat; cover and cook 10 minutes, stirring occasionally. Add butter and Cheddar cheese; stir until melted. Cool 10 minutes
  2. Scoop grits into a serving bowl using an ice cream scoop. Combine Parmesan cheese and paprika; mix well. Sprinkle cheese mixture over tops of scoops just before serving.
