Trim off large leaves of broccoli. Remove tough ends of lower stalks, and wash broccoli thoroughly. Separate into spears; coarsely chop stalks and flowerets.
Heat shortening in a heavy skillet. Add broccoli, water, and salt; stir well. Cover, and cook over medium heat 13 minutes, stirring occasionally. Remove from heat, and sprinkle with lemon juice. Garnish with lemon rind curls, if desired.
