Sour Cream-Chipotle Potato Salad
Ingredients
- 3 pounds cooked and quartered baby red potatoes
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup thinly sliced green onions
- 1/3 cup chopped fresh cilantro
- 2 tablespoons sauce from canned chipotle peppers in adobo sauce
- 3/4 teaspoon lime zest
- 2 tablespoons lime juice
- Salt and freshly ground pepper to taste
Preparation
- Stir together potatoes, mayonnaise, sour cream, green onions, cilantro, adobo sauce, lime zest, and lime juice. Season with salt and freshly ground pepper to taste just before serving.
