Sour Cream-Chipotle Potato Salad

Ingredients

  • 3 pounds cooked and quartered baby red potatoes
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup thinly sliced green onions
  • 1/3 cup chopped fresh cilantro
  • 2 tablespoons sauce from canned chipotle peppers in adobo sauce
  • 3/4 teaspoon lime zest
  • 2 tablespoons lime juice
  • Salt and freshly ground pepper to taste

How to Make It

  1. Stir together potatoes, mayonnaise, sour cream, green onions, cilantro, adobo sauce, lime zest, and lime juice. Season with salt and freshly ground pepper to taste just before serving.
