- 2 tablespoons shortening
- 1 cup uncooked regular rice
- 1 small onion, chopped
- 1 small green pepper, chopped
- 1 clove garlic, minced
- 2 large tomatoes, peeled and chopped
- 2 cups water
- 1 teaspoon salt
- 1/4 teaspoon pepper
How to Make It
Combine shortening and rice in a large skillet. Cook over medium heat until lightly browned.
Add onion, green pepper, and garlic; cook, stirring constantly, until tender. Add tomatoes, water, salt, and pepper; cover, and cook over low heat for 20 minutes. Serve immediately.
