Makes 1 cocktail

From its fresh, crisp flavor that plays well with grilled foods to its peachy pink color, this cocktail is like summer in a glass. Adapted from a recipe by bartender Andrew Calisterio, who has partnered with Cloth & Flame on events. The drink is Cooley and Laux's go-to for warm-weather soirées.

How to Make It

Combine aquavit, lemon juice, and simple syrup in a Collins glass. Fill about three-quarters with crushed ice, then slowly add sparkling wine to about an inch from brim. Top with raspberry liqueur and garnish with a raspberry.

*To make honey simple syrup, combine 2 parts honey to 1 part water in a jar with a lid; cover tightly and shake vigorously. (Don't heat the mixture.)
