Prepare Miss Mattie's Southern Pimiento Cheese as directed.
Butter 1 side of each bread slice. Place 8 bread slices, buttered sides down, on a hot griddle or in a large skillet over medium heat.
Spread 1/2 cup pimiento cheese over each bread slice on griddle. Top each with 2 cooked bacon slices.
Place remaining 8 bread slices, buttered sides up, on bacon. Turn sandwiches, and cook 5 to 7 minutes or until golden brown. (Pimiento cheese should be slightly melted.) Serve with strawberry preserves.
Nothing is better than the original at The Chocolate Angel Tea Room in Plano, Tx but having seen the Southern Living review framed in the restuarant I had to do a little research and make it myself. It was the HIT of the bridal shower. Because they were on the serving table, I served on croisants kept warm under a lamp and they were still good. At a recent party for that annual football classic, I served it dip style in a heated dish with crackers and it was just as good. For that occassion I chopped bacon into bits sprinkled over the top instead of bacon slices.
I just happened to have some homemade pimiento cheese, so when I saw tIhs recipe in SL, I had to try it. YUM! I know it sounds strange, but it's really delicious. Go on try it.... you know you want to. FYI - I used my own pimiento cheese recipe.
