Photo: Randy Mayor; Styling: Rose Nguyen
This snapper is seasoned with basil, mint, chopped jalapeno, and is ready in just 20 minutes. Serve with jasmine rice and sauteed green beans.
How to Make It
Step 1
Preheat broiler.
Step 2
Arrange fish in a single layer on a broiler pan lightly coated with cooking spray. Sprinkle fish with 1/4 teaspoon salt and pepper. Broil 6 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness.
Step 3
Combine basil and remaining ingredients in a food processor; process 1 minute or until smooth. Serve with fish.

LOVED THIS! It was crazy easy and so tasty. I was skeptical that the fish itself would be bland (ha! it was full of flavor and then the sauce was so good on it), and that the sauce would be spicy (but, it wasn't at all!)
I served this with a bulgur salad and kale. The sauce for the snapper was so good, I wanted to put it on everything!
I will definitely make this again. Yum.
