Snap Peas with Cucumber and Ginger

  • 2 tablespoon(s) fresh lemon juice
  • 1 tablespoon(s) fresh ginger finely grated
  • 1 teaspoon(s) sugar
  • 1/2 pound(s) sugar snap peas trimmed and thinly sliced
  • 1/2 English cucumber sliced
  • 1 shallot thinly sliced
  • 1/2 teaspoon(s) salt
  • 1/4 teaspoon(s) pepper


  1. In a medium bowl, whisk together the oil, lemon juice, ginger, sugar, 1/2 tsp salt and 1/4 tsp pepper. Add the snap peas, cucumber, and shallot and toss to combine.
