Enjoy fresh-from-the-garden Snap Pea Salad. Sugar snap peas are sweet, crunchy, and loaded with vitamins.
8 ounces sugar snap peas
2 cups mâche
2 cups chopped fresh cauliflower
1/2 cup chopped green onions
3 tablespoons chopped fresh dill weed
1 garlic clove, minced
1 tablespoon olive oil
1 tablespoon white wine vinegar
1 teaspoon salt
Cut sugar snap peas into 1-inch pieces. Cook in boiling water to cover 15 seconds; plunge in ice water. Drain. Toss together peas, mâche, cauliflower, green onions, dill weed, minced garlic, olive oil, vinegar, and salt.
