Snap Pea Salad

Enjoy fresh-from-the-garden Snap Pea Salad. Sugar snap peas are sweet, crunchy, and loaded with vitamins.


  • 8 ounces sugar snap peas
  • 2 cups mâche
  • 2 cups chopped fresh cauliflower
  • 1/2 cup chopped green onions
  • 3 tablespoons chopped fresh dill weed
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • 1 tablespoon white wine vinegar
  • 1 teaspoon salt

How to Make It

  1. Cut sugar snap peas into 1-inch pieces. Cook in boiling water to cover 15 seconds; plunge in ice water. Drain. Toss together peas, mâche, cauliflower, green onions, dill weed, minced garlic, olive oil, vinegar, and salt.
