I found this recipe really lacking in flavor. It wasn't bad, however, it just wasn't really good either. The texture of the grits was perfect, but nobody could taste the cheese. The cheese was a waste of calories, so I'd recommend you either add more or just omit it completely. But most of all, the pork was bland. Yes, it was easy (so easy you really don't need a recipe), but it pretty much just tasted like a pork chop braised in chicken broth. Don't think I'll try to even tweak this one, I'll just move on. There are plenty of other great recipes on this site.
Smothered Pork Chops with Onions and Cheddar Grits
Serve mashed potatoes in place of the cheese grits, if you prefer. Round out the meal with steamed green beans.
Yield: 4 servings (serving size: 1 pork chop and 1/2cup grits)

Ingredients
- 2 2/3 cups water
- 2/3 cup uncooked quick-cooking grits
- 1/4 cup (1 ounce) preshredded sharp cheddar cheese
- 1/2 teaspoon salt, divided
- 1/8 teaspoon garlic powder
- Dash of ground red pepper
- 4 (4-ounce) boneless center-cut loin pork chops, trimmed
- 1/2 teaspoon garlic powder
- 1/8 teaspoon black pepper
- 3 tablespoons all-purpose flour
- 2 teaspoons butter
- 1 cup chopped onion
- 1/2 cup fat-free, less-sodium chicken broth
- 1/4 cup water
Preparation
- Bring water to a boil; stir in grits. Reduce heat, and cook 5 minutes, stirring frequently. Remove from heat. Stir in cheese, 1/4 teaspoon salt, 1/8 teaspoon garlic powder, and red pepper.
- While grits cook, sprinkle pork with 1/4 teaspoon salt, 1/2 teaspoon garlic powder, and black pepper. Dredge in flour. Melt butter in a large nonstick skillet over medium-high heat. Add the pork and onion; sauté 6 minutes, turning pork over after 3 minutes. Add broth and water; bring to a boil. Cover, reduce heat, and simmer 4 minutes. Serve with grits.
