So yummy on the Watermelon "Steak" Salad. I used regular smoked paprika because I couldn't find pimenton specifically in my grocery store but the dressing was excellent nonetheless. I used a little more than half on the salad and it was proportioned perfectly.

- 2/3 cup olive oil
- 1/3 cup red wine vinegar
- 2 tablespoons honey
- 2 teaspoons pimentón (sweet smoked Spanish paprika)
- 2 teaspoons coarse-grained Dijon mustard
- Kosher salt and black pepper to taste
- Whisk together olive oil, vinegar, honey, pimentón, and Dijon mustard. Add kosher salt and black pepper to taste.
