I am not sure how to feel about this recipe. I made it tonight with the watermelon "steak" and I felt that the smokiness of the paprika was a little overpowering to the other ingredients.
The recipe makes A LOT! I only used about 2 TBS to dress our salad perfectly and I still have almost 2 cups left.
To use up the rest of the dressing, I think I am going to use it as a marinade for grilled chicken.
Next time, I would sub the red wine vinegar for honey or balsamic and reduce the paprika to let some of the other dressing flavors shine.
So yummy on the Watermelon "Steak" Salad. I used regular smoked paprika because I couldn't find pimenton specifically in my grocery store but the dressing was excellent nonetheless. I used a little more than half on the salad and it was proportioned perfectly.
