Smoky Chicken Corn Cakes

    Great balance of flavors! I used chicken breast that I had on hand. For my 1 and 5 YO, I served the "pancakes" with butter and a drizzle of honey. My husband ate the leftover cakes for breakfast and I used the leftover toppings in a salad the next day for lunch. So yummy!
