Smoked Turkey Mango Salad
Mangoes are ripe and sweet when they're as soft as a ripe banana. If you can't find fresh mangoes, you can use a jar of refrigerated mango slices. Measure out 1 cup, and save the rest for another use. The grapefruit-vinegar dressing provides a delicious flavor contrast to the sweet fruit.

Ingredients
- 6 ounces smoked turkey breast, cut into thin strips
- 4 cups thinly sliced savoy cabbage
- 1 cup finely chopped mango (about 1 large)
- 1/2 cup chopped fresh cilantro
- 1/2 red onion, slivered
- 3 tablespoons grapefruit juice
- 2 tablespoons cider vinegar
- 1 tablespoon olive oil
- 1/2 teaspoon pepper
- 1/4 teaspoon salt
Preparation
- 1. Combine first 5 ingredients in a large bowl.
- 2. Combine grapefruit juice and next 4 ingredients in a small jar; cover tightly, and shake vigorously. Pour dressing over salad, and toss gently. Serve immediately.
