Mangoes are ripe and sweet when they're as soft as a ripe banana. If you can't find fresh mangoes, you can use a jar of refrigerated mango slices. Measure out 1 cup, and save the rest for another use. The grapefruit-vinegar dressing provides a delicious flavor contrast to the sweet fruit.

How to Make It

Step 1

Combine first 5 ingredients in a large bowl.

Step 2

Combine grapefruit juice and next 4 ingredients in a small jar; cover tightly, and shake vigorously. Pour dressing over salad, and toss gently. Serve immediately.
