Ingredients

  • 1 (8-ounce) package smoked trout
  • 2/3 cup reduced-fat sour cream
  • 2 tablespoons reduced-fat mayonnaise
  • 1 1/2 cups matchstick-cut carrots
  • 1/4 cup finely diced red onion
  • 1 cup diced peeled Granny Smith apple (about 1 medium)
  • 1/4 cup finely chopped walnuts, toasted
  • 16 slices thin whole wheat bread (such as Pepperidge Farm Very Thin)
  • 8 Boston lettuce leaves

Preparation

  1. 1. Process first 3 ingredients in a food processor until smooth. Combine puréed trout mixture, carrots, and next 3 ingredients in a bowl; toss well.
  2. 2. Top each of 8 bread slices with a lettuce leaf. Spoon trout salad evenly over lettuce; top with remaining bread slices.
