  • 3/4 cup fat-free mayonnaise
  • 1/3 cup low-fat sour cream
  • 2 tablespoons finely chopped shallots (about 1 large)
  • 1 1/2 tablespoons chopped fresh dill
  • 1 teaspoon stone-ground mustard
  • 1 teaspoon grated lemon rind
  • 1/4 teaspoon black pepper
  • 10 (0.6-ounce) slices light wheat bread,toasted
  • 3 (3-ounce) packages sliced smoked salmon
  • 2 1/2 cups gourmet salad greens


  1. Combine first 7 ingredients in a small bowl.
  2. Spread 2 tablespoons mayonnaise mixture over each bread slice. Top 5 bread slices evenly with salmon slices and salad greens. Top with remaining bread slices, coated side down.
