Smoked Chicken-and-Potato Salad

  • 5 medium red potatoes, halved and cut into 1/4-inch slices (about 4 cups)
  • 3 tablespoons white wine vinegar
  • 2 tablespoons water
  • 1 tablespoon extra-virgin olive oil
  • 2 teaspoons Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces ready-to-eat smoked chicken breasts, cut into julienne strips
  • 1/3 cup thinly sliced green onions

How to Make It

  1. Place potatoes in a medium saucepan; cover with water. Bring to a boil. Cook 5 minutes; drain and set aside.
