I've made this several times. It's light, refreshing, and quick. As an appetizer, instead of bread, I assembled the "bites" onto crackers. It was a big hit and everyone loved them. I've made the sandwich by itself before, using 2 slices of bread. It was great. For my boyfriend, to make it taste less like "chick food", I've hidden 2 slices of extra crispy bacon underneath the sprouts. He loved it.

I was trying to find something quick and easy for lunch and stumbled across this - boy, am I glad I did! Added a clove of garlic, juice from half a lemon, and some ground red pepper to the bean mixture to spice it up a bit. Great flavors and textures - this is a keeper!

A really good sandwich combination-- why didn't I think of it? I just used 2 slices of bread. Substituted tomatoes for sprouts (what I had on hand) and used pre-packaged roasted red pepper hummus. Made for a yummy, if a bit messy, lunch!

Great sandwhich that comes together fast for a busy night! Definitely a keeper. I left out the oil (didn't think it needed any), and added some seasonings from my spice cabinet to the beans....(garlic powder, onion powder, dried parsley), then added fresh tomatoes from the garden and a slice of hickory smoked Muenter cheese....delicious. I didn't have a ripe avocado, so I can only imagine what it will taste like with that addition.

5 stars with one adjustment. i added a slice of thick cut smoked bacon from the butchers counter and it was phenomenal!! ok, a couple other little tweeks- i added a little lemon juice and garlic to the white bean mash.

my husband was left wondering how something 'without any meat' could taste so good! he had this 3 days in a row! I used the packaged hummus instead of making my own beans for simplicity sake. A nice heavy wheat bread really makes a difference I think. This is so easy and so good.

Love it! Simple, fast prep and delicious results. Throw a little extra spice in the beans with chiles and add a few slices of bacon, perfect! Good on a winter night, but this would also be great for those summer days when it's just too hot to cook.

This was really good. I didn't have an avocado that was ripe but made it exactly as directed otherwise. Will definitely make again.

Fabulous! Added veggie bacon, Swiss cheese and sliced heirloom tomatoes. The colors were outstanding and the taste was even better!

Too bland for me, I even added tomatoe and bacon and it just didn't cut it.
