How to Make It

Cut cucumber in half lengthwise; cut each half crosswise into thirds. Place pieces, cut side down, on a cutting board; smash with a heavy skillet until slightly flattened and split in places. Chop into 1-inch pieces. Combine sambal oelek, sesame oil, salt, and garlic. Toss with cucumber, green onions, and cilantro. Let stand 15 minutes.
