Combine with nutty sesame oil and fresh green onions, this easy veggie salad is light and refreshing, yet packs a spicy, unexpected kick. Let stand to allow the flavors to mesh before consuming.

Ingredients

  • 1 English cucumber
  • 1 1/2 teaspoons sambal oelek
  • 1 teaspoon toasted sesame oil
  • 1/4 teaspoon salt
  • 1 garlic clove, grated
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro

How to Make It

  1. Cut cucumber in half lengthwise; cut each half crosswise into thirds. Place pieces, cut side down, on a cutting board; smash with a heavy skillet until slightly flattened and split in places.
