Ingredients

  • 1 pound(s) black beans, dried
  • 1 tablespoon(s) olive oil
  • 6 cup(s) water
  • 1 onion chopped
  • 1 green pepper chopped
  • 1 red pepper chopped
  • 4 clove(s) garlic chopped
  • 2 teaspoon(s) salt
  • 1/2 teaspoon(s) oregano
  • 1/2 teaspoon(s) pepper
  • 2 bay leaves
  • 1 teaspoon(s) sugar
  • 2 tablespoon(s) red wine
  • 2 tablespoon(s) red wine vinegar

Preparation

  1. Soak Beans (quick method)
  2. - Rinse and drain 1lb beans
  3. - Combine beans w/ 6-8c water
  4. - bring to a boil for 3min and then remove from heat for 1hr
  5. - Drain beans

  6. Cook Beans
  7. - Simmer drained beans + 6c water for 45-60min
  8. - Drain
  9. - Saute 1 onion in 1 T EVOO until brown
  10. - Add green pepper, red pepper, and garlic
  11. - Add 2t salt, 1/2 t pep, 1/2 t dried oregano, 1 t sugar, 2 bay leaves
  12. - Mash 1 cup of beans and add to vegetable mixture
  13. - Add remaining beans and 6-8 cups of water
  14. - Bring to boil and simmer for 1-2hrs
  15. - Add 2T red wine and 2T vinegar and simmer for 1hr
