The English cucumber is ideal for this salad because it is seedless. Pickling or salad cucumbers may also be used.
2 cups thinly sliced peeled English cucumber
1 tablespoon minced fresh chives
2 teaspoons minced fresh cilantro
2 tablespoons rice vinegar
1 teaspoon sugar
1/8 teaspoon salt
1/8 teaspoon crushed red pepper
How to Make It
Combine cucumber, chives, and cilantro in a medium bowl. Combine vinegar and remaining 3 ingredients in a small bowl, stirring until sugar dissolves. Pour vinegar mixture over cucumber mixture; stir gently.
