Fresh ginger is available in the produce section. Look for pieces that are firm with a smooth skin.
1/4 cup peach spread
1 tablespoon water
1 tablespoon grated peeled fresh ginger
1 tablespoon dark brown sugar
2 teaspoons whole grain Dijon mustard
4 (3-ounce) slices 33%-less-sodium lean ham
How to Make It
Combine first 5 ingredients; set aside.
Coat both sides of ham slices with cooking spray. Place a large nonstick skillet over medium-high heat until hot. Add ham slices; cook 1 1/2 to 2 minutes on each side or until lightly browned. Transfer ham to a platter.
Reduce heat to medium-low. Add peach spread mixture to pan; cook 30 seconds until peach spread melts. Add ham slices; cook 2 minutes, turning frequently to glaze.
Meh! Waste of good ingredients. The ginger overwhelmed the glaze. We scraped it off and ate the ham. (Served with glazed sweet potato/butternut squash mix and steamed broccoli-much better than the entree!).
