Grease a 9-inch cast-iron skillet; preheat in a 400° oven 4 minutes.
Combine first 5 ingredients in a bowl; make a well in center of mixture.
Combine buttermilk, bacon drippings, and eggs, stirring well; add to dry ingredients, stirring just until moistened. Pour into hot skillet.
Bake at 400° for 20 to 25 minutes or until golden brown. Remove from skillet, and serve warm or at room temperature.
