Skillet-Barbecued Pork Chops

Skillet-Barbecued Pork Chops

Oxmoor House MARCH 2006

  • Yield: 4 servings (serving size: 1 chop and about 1/3 cup sauce)

Ingredients

  • 4 (4-ounce) boneless center-cut loin pork chops
  • Cooking spray
  • 1/4 cup minced onion
  • 1 tablespoon minced garlic (about 1 large clove)
  • 1 cup water
  • 1/2 cup no-salt-added tomato paste
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon lemon juice
  • 1/8 teaspoon salt

Preparation

Trim fat from chops. Coat a small nonstick skillet with cooking spray, and place over medium-high heat until hot. Add pork chops, and cook 2 minutes on each side or until browned. Remove chops from pan. Wipe drippings from pan with a paper towel.

Coat pan with cooking spray; place over medium-high heat until hot. Add onion and garlic; sauté 1 minute. Add water and remaining 5 ingredients to pan; stir well. Return chops to pan; bring to a boil. Reduce heat, and simmer, uncovered, 20 minutes or until tender.

To serve, spoon sauce mixture over pork chops.
