In a small bowl, combine 1 teaspoon Dijon mustard, 1 tablespoon red wine vinegar, 3 tablespoons olive oil, 1/2 small shallot (finely chopped), 1/2 teaspoon salt, and a few grinds of fresh black pepper. Whisk until well combined.
