This simple whole chicken recipe is great served as is with crusty bread or over rice, but it’s also a great way to cook chicken ahead of time to use in a variety of dishes, such as chicken salad, soups, and casseroles.
1 (4-lb.) whole chicken
2 teaspoons kosher salt
1 teaspoon black pepper
How to Make It
If applicable, remove neck and giblets from chicken; discard or reserve for another use. Sprinkle inside and outside of chicken with salt and pepper. Place chicken in slow cooker; cover and cook on LOW 4 hours. Remove and discard chicken skin and bones, and serve chicken with accumulated juices, or store meat and juices separately in airtight containers in refrigerator for future use.
