How to Make It

Combine lemon juice, Parmesan cheese, fish sauce, Dijon mustard, black pepper, salt, garlic, and egg yolk in the bowl of a mini food processor; pulse until combined. With processor running, slowly pour canola oil, olive oil, and water into egg yolk mixture; process just until blended and smooth.
