  • 2 tablespoons grated Parmesan cheese
  • 1 1/2 teaspoons fish sauce
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon kosher salt
  • 1 garlic clove, crushed
  • 1 large pasteurized egg yolk
  • 3 tablespoons canola oil
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons water

How to Make It

  1. Combine lemon juice, Parmesan cheese, fish sauce, Dijon mustard, black pepper, salt, garlic, and egg yolk in the bowl of a mini food processor; pulse until combined. With processor running, slowly pour canola oil, olive oil, and water into egg yolk mixture; process just until blended and smooth.
