- 1/2 cup butter or margarine, softened
- 1 1/2 cups sugar
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1 cup milk
- 1/2 teaspoon lemon extract
- 4 egg whites
How to Make It
Cream butter; gradually add sugar, beating well.
Combine flour and baking powder; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Mix well after each addition. Stir in lemon extract.
Beat egg whites (at room temperature) until stiff but not dry; gently fold into batter
Pour batter into 2 greased and floured 9-inch round cake pans. Bake at 375° for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pans 10 minutes; remove layers from pans, and let cool completely.
