Ingredients

  • 2 1/4 cup(s) flour
  • 1 teaspoon(s) baking powder
  • 1/2 teaspoon(s) baking soda
  • 3/4 teaspoon(s) cinnomon
  • 1/4 teaspoon(s) salt
  • 1 stick(s) unsalted butter
  • 1 cup(s) brown sugar
  • 2 whole(s) eggs
  • 1/4 cup(s) molasses
  • 1/4 cup(s) plain greek yogurt
  • 1 tablespoon(s) ginger
  • 1/2 cup(s) oats
  • 1 1/4 cup(s) chopped pecans
  • 1 1/4 cup(s) cranberries

Preparation

  1. - Preheat oven to 375 degrees
  2. - Combine flour, baking powder, baking soda, cinnamon and salt in a mixing bowl
  3. - Stir until combined
  4. - In a large mixing bowl, beat butter and brown sugar with a hand mixer on medium speed until light and fluffy
  5. - Beat in the eggs in one at a time
  6. - Slowly add the molasses and continue to beat
  7. - Add the yogurt and ginger
  8. - Beat until smooth and combined
  9. - Reduce the speed and beat in the flour mixture
  10. - Fold in oats and half of the cranberries and pecans
  11. - Drop the mixture in tablespoon-sized heaps onto an ungreased cookie sheet and sprinkle with remaining cranberries and pecans
  12. - Bake for 10 to 12 minutes or until golden brown
