Shrimp Sautéed with Broccolini

This ginger-spiced dish is a tasty way to enjoy a serving of vegetables.

  • Yield: 4 servings (serving size: about 1 cup shrimp mixture and 3/4 cup rice)
  • Total: 1 Hour, 7 Minutes


  • 1 pound Broccolini, trimmed
  • 2 teaspoons olive oil
  • 1/4 cup sliced green onions
  • 1 tablespoon thinly sliced peeled fresh ginger
  • 3/4 pound medium shrimp, peeled and deveined
  • 1/2 teaspoon salt
  • 2 tablespoons Shrimp Butter
  • 3 cups hot cooked long-grain brown rice


1. Cook Broccolini in boiling water for 2 minutes or until nearly tender; drain.

2. Heat a large nonstick skillet over medium-high heat. Add oil to pan; swirl to coat. Add onions and ginger; sauté 1 minute. Add shrimp, salt, and Broccolini; sauté 4 minutes or until shrimp are done. Stir in Shrimp Butter; cook for 30 seconds or until butter melts. Serve over rice.
