Stir together 4 cups chopped cooked shrimp, 3/4 cup mayonnaise, 4 thinly sliced green onions, 2 diced celery ribs, 2 tsp. grated lemon rind, 1/2 tsp. ground red pepper, and salt and black pepper to taste.
Similar to what my husband does. Instead of lemon zest, marinate shrimp in lemon juice for a couple of hours, drain and add to the mayo. Then add lemon juice to taste. We like the chopped green onion or fresh chopped chives added in. He also uses dill to taste and several good shakes of the crushed red pepper. I like adding chopped up cherry tomato, chunked avacado, and roasted corn. This makes it into a really good shrimp taco!
I made this recipe tonight- #1 Reduce the amount of mayonnaise - I had to improvise and added some finely chopped cucumbers and fresh peaches to try to even out the mayo. #2 The taste ended up kind of bland, so next time, I will be working with some spice mixtures to liven it up. I paired it with a watermelon and blue cheese salad with a peach vinaigrette. (I'd already made the vinaigrette before the mayo incident) I served it in a parmesan bowl.
