shrimp pasta and escarole

  • 1 1/2 tbspn olive oil
  • 2 scallions cut up
  • 10 black olives
  • tblspn capers
  • juice of one lemon
  • 2 sundried tomatoes cut up in small pieces
  • 21 raw frozen shrimp defrosted
  • chopped parsley
  • juice of one lemon
  • 1 bunch escarole
  • grated cheese


  1. Boil escarole for 3 minutes. Strain and reserve juice.
  2. Sautee escarole in garlic and put aside

  3. Sautee scallions
  4. Add sundried tomatoes
  5. Sautee in low flame for 1 minute
  6. Add capers and olives and sautee at very low flame for 3 minutes
  7. Add shrimp and juice of one lemon
  8. Cook only for few minutes until shrimp turn pink
  9. Add 1 1/2 laddleful of reserved juice from escarole. Shut off gas and do not cover to keep shrimp from overcooking

  10. Cook 5 oz. Angel hair pasta.

  11. Set up individual plates as folloes:
  12. Bed of escarole
  13. Pasta - springle with grated parmesan cheese
  14. Top with shrimp , add juice from shrimp
