Ingredients

  • 1/2 cup olive oil
  • 2 cloves garlic
  • 1 large onion
  • 2/3 cup dry white wine
  • 4 large tomatoes peeled and chopped (or one can diced tomatoes)
  • 1 tsp chopped fresh oregano
  • 1/4 cup chopped Italian parsley
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 lbs shrimp shelled
  • 1/2 lb feta cheese

Preparation

  1. In shallow casserole heat oil and saute garlic and onion until transparent. Add wine, tomatoes, herbs and seasonings. Simmer 30 minutes or until mixture has thickened. Add shrimp and stir to coat thoroughly. Crumble feta cheese over top of casserole. Preheat oven to 450 degrees and bake for about 15 minutes or until shrimp is cooked and cheese has melted.
