Shrimp and Hoppin' John Salad

Great combo of flavors, significantly different from our everyday menu. Goes great with fried fish or hot links or just on its own as a lunch

Excellent recipe! Enjoyed it for New Year's Day and my husband requested we add this into our meals throughout the year. Good enough for company :)

I cut the recipe in half for my husband and I. It was AWESOME. We couldn't wait for it to chill, so we ate warm....fantastic! Just wish I made the full recipe, leftovers would have been great. Easy to make.
