Shrimp and Caper Salad

This salad is easy, comes together quickly, and combines shrimp, capers, and a homemade sauce.

1 pound peeled and deveined cooked shrimp
2 tablespoons capers, drained
6 tablespoons fresh lemon juice (about 2 lemons)
2 tablespoons extravirgin olive oil
2 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon hot sauce
1/2 teaspoon salt
1/2 cup chopped fresh parsley
8 cups gourmet salad greens


Combine first 9 ingredients in a medium bowl. Let stand 5 minutes.

Place salad greens on each of 4 plates. Spoon shrimp mixture on top of greens.
